Made by the Sahu family since 1875, this gajak biscuit combines hand-hammered roasted sesame seeds with natural jaggery (gur) and cow ghee. No preservatives, no liquid glucose, no artificial colour. Gajak Biscuit — also called Khasta Gajak, Til Gajak, or Sesame Gajak — is made by hand-hammering roasted sesame seeds with jaggery and cow ghee into thin, crispy, flaky sheets. The hand-hammering process releases the natural oils from the sesame seeds, creating thin, airy layers with a clean, satisfying snap. Sahu Gajak Biscuit is made using this same traditional hand-hammering process in Menpura, Rajasthan since 1875.
All three are traditional Rajasthani sesame-jaggery sweets. Gajak Biscuit is hand-hammered into flat, crispy, flaky sheets — thin and light. Gajak Roll is hand-rolled into a cylindrical log and sliced into layered rounds — slightly lighter and more delicate. Tilkut is hand-pounded in a mortar into a dense, crumbly block — firmer and more intense in sesame flavour. Same core sesame-jaggery ingredients; three entirely different preparations and textures.
