Step 1 — Slow Roasting Hulled Sesame Seeds
Premium hulled quality sesame seeds are dry-roasted slowly in a heavy pan over medium heat — stirred continuously until they turn light golden and release a rich nutty aroma. Hulled sesame seeds have the outer shell removed — giving a cleaner, milder, more refined sesame flavour compared to unhulled seeds. This step needs experience because over-roasting can make sesame bitter, while under-roasting keeps the flavour flat. After roasting, the sesame seeds are cooled completely before mixing.
Step 2 — Preparing Jaggery Syrup with Cow Ghee
Natural jaggery, sugar, and cow ghee are cooked together on medium heat until the mixture reaches the perfect brittle stage.
